Gluten-Free Solution



You become creative when you have to eat gluten-free! I have started taking our Butterhead lettuce leaves and using it as my hamburger bun. It works terrific. I have also used the leaves for tuna salad and egg salad wraps. The Romaine lettuce also works, although I prefer the flexibility of the Butterhead leaves.

Refreshing Cucumber Salad

This week I sliced 9 of our European Seedless Cucumbers and half of a small onion as thinly as possible. I poured apple cider vinegar over them in a bowl until it was just below the top cucumbers. I added sugar and salt to taste and stirred well. The cucumbers are wonderful after chilling and "marinating" for several hours. They keep well as leftovers too!

Freddie's Favorite Salad Dressing

1 clove garlic, finely chopped
1/3 c apple-cider vinegar
2 T Dijon mustard
2 T honey, heaping
1-1/2 T sugar
1 t salt
1/4 t pepper
1/2 c extra-virgin olive oil

Combine garlic, vinegar, mustard, honey, sugar, salt and pepper in a small saucepan and whisk over medium heat. Bring to a simmer. Slowly whisk in the olive oil. Continue whisking until completely combined. Remove from heat. Serve warm over Bacon's Select lettuce.

Big Saturday

Tomorrow is opening day at the Riverside Arts Market in Jacksonville under the Fuller Warren Bridge. Fred & Sharon will be there from 10 a.m. - 4 p.m. Come early & stay all day!

Freddie & Heather will be at The Amelia Island Garden Show from 9 a.m. to 5 p.m. We hope to see everyone and make new friends. The Fernandina Farmer's Market will resume next Saturday, March 10th.
