This week we will be bringing cut rosemary to Market. The bunches are a good size. Rosemary keeps well in the refrigerator for several weeks. On the occassion that I have bought cut herbs from the grocery store (forbid it!), I have taken what I do not use and dry it for later use. I wash & dry the herbs well. Then I lay them out on a paper towel on a cookie sheet, cover with another paper towel, and leave for about two weeks or until completely dry. No waste!

Timber!
Well, my blogging has not been too good recently! The greenhouse business has kept us busy. We are planning ahead to building our 3rd greenhouse. However, we had 60 pine trees either in the way or putting our houses at risk. So...the big project was felling the trees. Between Fred, Freddie & special help from family, the trees are all down & thankfully, no accidents!

New Crop: Bell Peppers
We are harvesting spinach now, although it is in limited quantity. We enjoyed a bag of it last week and hope you will enjoy it as well. We ate it in a salad and also tossed it in an omelette. Delicious!
The tomatoes will come to market for two more weeks and then there will be a lull before the new plants are bearing.

Gluten-Free Solution
You become creative when you have to eat gluten-free! I have started taking our Butterhead lettuce leaves and using it as my hamburger bun. It works terrific. I have also used the leaves for tuna salad and egg salad wraps. The Romaine lettuce also works, although I prefer the flexibility of the Butterhead leaves.

Refreshing Cucumber Salad
This week I sliced 9 of our European Seedless Cucumbers and half of a small onion as thinly as possible. I poured apple cider vinegar over them in a bowl until it was just below the top cucumbers. I added sugar and salt to taste and stirred well. The cucumbers are wonderful after chilling and "marinating" for several hours. They keep well as leftovers too!

Freddie's Favorite Salad Dressing
1 clove garlic, finely chopped
1/3 c apple-cider vinegar
2 T Dijon mustard
2 T honey, heaping
1-1/2 T sugar
1 t salt
1/4 t pepper
1/2 c extra-virgin olive oil
Combine garlic, vinegar, mustard, honey, sugar, salt and pepper in a small saucepan and whisk over medium heat. Bring to a simmer. Slowly whisk in the olive oil. Continue whisking until completely combined. Remove from heat. Serve warm over Bacon's Select lettuce.

Big Saturday
Tomorrow is opening day at the Riverside Arts Market in Jacksonville under the Fuller Warren Bridge. Fred & Sharon will be there from 10 a.m. - 4 p.m. Come early & stay all day!
Freddie & Heather will be at The Amelia Island Garden Show from 9 a.m. to 5 p.m. We hope to see everyone and make new friends. The Fernandina Farmer's Market will resume next Saturday, March 10th.
